Outside of frozen fish gets trimmed before defrosting. Those things are frozen solid, hence that guy using industrial saw to cut it. Also frozen fish is different grade, look at the care they take with fresh fillet, wipe the blade, couple different knifes, no throwing.

japanese are a bunch of lucky people. Every thing is so fresh and so tasty!
With tuna that big i think i will eat sashimi all day!

It’s where the gill plate used to be. they removed it and took out the gills, hence a giant hole encrusted with ice.

Hmm, thats a good point.
But, the floor is dirty, with dirt and shoe scum, which hopefully can be washed off the skin of the tuna or is discarded when the tuna is skinned.
The human hand has oils and bacteria. and disease. could that be the answer?

the hole in the neck is kinda disturbing
